Paleo Beef or Chicken Avocado Wrap

Ingredients

  • 2 cups of chicken or beef cooked and shredded or strips
  • 1/2 cup avocado cubed
  • 1/2 cup green online chopped
  • 1/2 cup walnuts chopped
  • 1/2 cup fresh coriander chopped
  • Black pepper
  • 2 tbsp lemon juice
  • 1/4 tsp fresh dill
  • 1 tsp honey
  • 4 tbsp of extra virgin organic olive oil
  • Lettuce

directions

  1. Combine chicken or beef, avocado, sprouts, onions, walnuts and coriander in large bowl.
  2. Season with black pepper.
  3. In small bowl, whisk together lemon, dill and honey.
  4. Slowly add the extra virgin organic olive oil to honey mixture whisking until it becomes thick and creamy.
  5. Pour the lemon over chicken or beef mixture and toss.
  6. Scoop the mixture into lettuce leaves and enjoy!
