Avocado-Bean Salad

Ingredients

  • 200g of beans, black-eyed peas, white beans or other variant
  • 2 avocados
  • 1 large size cucumber or 2-3 small ones
  • 1 large, red onion
  • 1 tablespoon of white vinegar
  • 1 tablespoon of honey
  • 2-3 pinches of fresh dill
  • 2-3 garlic cloves
  • 2-3 tablespoons of extra virgin organic olive oil

Tip: feel free to add other fresh veggies (whatever you have at home, either raw or cooked- for example peppers, carrots, etc)

Leave the beans soak for the overnight in water, change the water in the morning (myth has it that this aids in reducing gas).  Place in boiling pot and boil for around 30-40 minutes, checking occasionally on the water. While beans are cooking, chop up all the vegetables, put them in a big bowl, mix them together and add vinegar, honey and extra virgin olive oil (preferably organic). When the beans finishing cooking, leave to cool, and then add them to the vegetable mix.
The salad is the best after the beans are cold and the aroma of all ingredients are fused together (after about half an hour to an hour in the fridge).
