All our olive oils are a blend between three different types of olives – the Kolovi, the Adramatiani, and the Lathoelia. The Kolovi and Adramatiani olives mature slowly and are black in color. They thrive in soil with slate in it. Their flavour has an intricate, fruity taste, and their olive oil colour is golden yellow to a golden green. The Lathoelia thrives in lower altitudes and is bigger in size. Their colour varies from a red-violet black to purple and deep black, and they are harvested only when fully ripened. Their taste is fleshy and slightly fruity and fragrant.
The harvest period for this award winning organic olive oil is between mid to late November until early January. This is when the olives are just turning from their ripe green color to their mature black color. This is what gives this olive oil its delicate taste.
The acidity of the olive oil is also of exceptional quality. evoᶾ free acidity ranges from 0.3-0.35% which allows it to be labelled as extra virgin and categorized as exceptional quality. It comes in a 500ml anti-reflective glass bottle.
Finally, this is an organic extra virgin olive oil. This means that the farming methods used are sustainable, no chemical fertilizers are used, and no chemical pesticides are used to kill the olive fruit fly. Only organic fertilizers and natural methods to kill the olive fruit fly are used. This translates into a clean, healthy product for you to consume.
evoᶾ is an exceptional quality organic extra virgin olive oil. It has a liquid texture (low glutinosity – smooth taste), due to its relatively high level of unsaturates and a golden light colour, giving it its unique fruity, slightly fleshy and fragrant taste.
Should be strictly used for garnishing foods. Pairs well with roasted fish, salads, roasted vegetables, and mezes.
This olive oil is an exceptional quality olive oil made from the same olive blend of our organic olive oils. The difference is that these olives are harvested in groves that do not follow our strict organic and sustainable farming methods.
The flavor is delicate, and its acidity ranges between 0.4-0.45%. It comes in 250ml, 1 liter tin, and 5 liter cans.
It is a great cooking olive oil, but also for garnishing foods.
The harvesting season for this olive oil is on the back-end of the season, starting around early December until January. The olive oil is from more mature olives yielding a higher volume of olive oil.
This product was an inspiration which became a reality after finding the right ingredients to the recipe. Our idea was to blend local herbs and spices with olives to create a unique taste. The result was this jam.
Made from organic green olives, the ingredients are mixed to bring pleasure with your first taste. We blended these olives with orange, cloves, vanilla, lemon juice, and brown sugar, keeping it local and honest. All ingredients are natural and there is no artificial preservatives.
We also wanted to keep production local, so we partnered up with the Women’s Cooperative of Parakila to help us make this recipe on an industrial scale and bottle it. Through this partnership, we are giving much needed employment to local women who may be financially vulnerable.
Due to its unique taste, there are many ways to use and pair this jam. To name a few, it goes extremely well with Greek yogurt, vanilla ice cream, with cheese, or garnish it on roasted fish. Or you can just eat it on plain toast for breakfast!
This jam is second in line of the jam series with yet more innovative pairings of local herbs and spices.
The basis of this inspiration was from a local hot tea beverage from the village of Agiassos called Kaynari. Unique of its kind and a recipe that includes eight different spices but remains mostly a secret and is passed along by word of mouth over the years.
The Kaynari mixture contains cinnamon, cloves, mountain tea, cardamom, and others, and is energy boosting and high in vitamins which helps fight the common cold.
Thus, this jam uses organic green olives with the Kaynari mixture, Greek mountain tea, cinnamon, orange, lemon juice, and brown sugar.
