Greek Salad (Horiatiki)


  • 1 medium-sized onion
  • half a cucumber
  • ½ cup rocket greens
  • 1 green pepper
  • fresh mint
  • 1 slab of feta cheese
  • handful of black olives
  • 4 tbs of evo3 extra virgin olive oil
  • 2 tbs vinegar
  • 2 medium-sized red tomatoes
  • salt and pepper to taste


Tip: Always use fresh, preferably organic, ingredients.

Tip:  If you want to prepare the salad in advance, do not add the salt until the last minute because the salt makes the tomatoes and cucumbers watery.

  1. Peel and cut the tomatoes and place them in a salad bowl. Thoroughly wash the rocket greens, cut them into large pieces. Seed and cut the green pepper. Peel and slice the cucumber into medium-sized thickness. Peel and dice the onion and rinse it in a sieve, pushing the water out with your fingers. Wash and finely chop the mint.
  2. Add all the above ingredients to the salad. Add the onion, the olives, the olive oil and vinegar and the seasonings.  Once mixed together, add the slab of feta cheese on the top.
  3. For extra kick, add a pinch of capers for flavour.
